Natural sweet wine from late harvest grapes
Varieties: 100% Petit Manseng.
Harvest: handpicked into 20 kg boxes.
Production: grapes are left to dehydrate on reed mats under cover with good ventilation for optimal preservation.This process reduces the grape volume by more than half, concentrating sugars, acids and aromas. Once optimal concentration is achived, the grapes are pressed, yielding a very low amount of juice.
Fermentation: a slow and gentle fermentation occurs until it stops naturally, leaving a high level of natural grape sugars.
Aging: aged in French oak barrels in a solera started in 2018. In autumn of 2024, part of the wine is drawn for bottling.
Production: 729 bottles of 37,5 cl each.
Packaging: 37,5 cl bottle with an individual case.
Analysis: Alcohol: 11% vol. Total acidity: 8,3 g/L. pH: 3,37. Sugars: 230 g/L.
Pairing suggestions: Blue cheeses, foie gras, cheescake, fruit-based cakes, and desserts.
Serving temperature: Best served chilled, between 6-10 °C.
Tasting notes: amber yellow, dense, and bright. Dominant notes of honey and white fruits in syrup, with hints of apricot, ripe peach, quince, and dried fruits like raisins, alongside subtle toasted cream and nuts.The plate is rich and complex, featuring caramelized mango, ginger, marmalade, and citrus elements. Persistent and vibrant finish.
